Honey-roasted Ham Hock


  • 2 pork knuckles
  • 1 lemon
  • 2 cloves of garlic
  • 2 tablespoons of honey
  • 2 tablespoons olive oil
  • 1 small glass of wine
  • Salt and pepper


Crush the garlic cloves with a pestle and mortar. Add the lemon zest, juice, honey, and olive oil. Season with salt and pepper.

Mix well and coat the pork (with a brush). Place in an oven dish and add a small glass of wine. Bake in a preheated oven at 180ºC for at least two hours. Turn the knuckles every so often and baste them with their juices.

An alternative way of preparing them is to pre-cook the knuckles in a pressure cooker with a bay leaf and an onion. This will take about twenty minutes. Remove and baste with the honey dressing. Bake (oven preheated to 180ºC) for about an hour. Serve with chips or mashed potatoes and steamed or grilled vegetables.
