Grilled marinated octopus

Ingredients (Serves 2)

  • 400 g cooked octopus
  • ½ cup extra virgin olive oil
  • Juice of 1 lemon
  • 2 tablespoons wine vinegar
  • 1 tablespoon oregano
  • Ground chilli pepper
  • Parsley
  • Salt and black pepper
  • 1 lemon (for garnish)

Method

In a bowl, combine the olive oil, lemon juice, vinegar, chopped oregano, and chilli pepper. Add the octopus, either whole tentacles or cut into pieces. Ensure the octopus is well coated in the marinade and marinate the octopus for at least one hour.

Once the marinade time is complete, preheat the grill to high heat. Drain the excess marinade from the octopus and grill until golden brown on all sides. Plate it and drizzle with a generous amount of olive oil and freshly ground black pepper. Garnish with a lemon wedge and a sprinkle of fresh chopped parsley. For the ideal accompaniment, serve with boiled potatoes seasoned with salt and bay leaf, then grill just before serving.
