Chilled pizzas

Transform simple tortilla wraps or wheat flatbreads into refreshing, flavour-packed snacks by lightly toasting them in a pan and topping them with your favourite sweet or savoury ingredients — even ice cream!

Who says pizza can’t be enjoyed cold? Forget soggy leftovers from the night before! No, these chilled pizza creations are made fresh, designed to be enjoyed cold, and bursting with flavour. Whether sweet or savoury, they offer endless room for creativity. With a few simple ingredients and a bit of imagination, you’ll discover a whole new dimension of pizza enjoyment.
The base for these quick and tasty creations is humble fajita flatbread – those thin, readily available wheat flour tortillas found in every supermarket. A swift flash in a hot pan on both sides is all it takes to achieve a light crispness. Once cooled, spread a generous base layer and then let your culinary imagination run wild. The only rule? Use ready-to-eat ingredients that require no further cooking and taste great chilled. Here are a few of our favourites.
For savoury treats, try a base of mayonnaise, hummus, cocktail sauce or classic ketchup and stock up on tomatoes, cheese, prawns, crab sticks, shredded chicken, and flaked fish for delicious toppings.
Fans of bold flavours will love this statement chilled pizza. Spread a layer of cream cheese (like Philadelphia) onto a pan-fried tortilla. Top with slices of goat’s cheese and generous dollops of caramelised onion. Add sliced gherkins, anchovies, and sprinkle with chopped walnuts and cashews, drizzle with extra virgin olive oil.
Try a Caprese-inspired alternative by starting with a pesto base then layer with torn mozzarella and finely diced tomatoes. Season with salt and pepper, scatter over fresh basil leaves, and finish with olive oil and a swirl of Modena balsamic glaze.
Another savoury option is to pan-fry slices of aubergine and set aside to cool. Toast the tortilla on both sides and decorate with alternate slices of Edam cheese and ham. Top with the aubergine and season. For a Canarian twist, swap out the pesto for mojo sauce or almogrote.
For a healthy treat, why not try a chilled dessert pizza? Use creamy yoghurt as a base and combine with chunks of ripe fruit and generous scoops of your favourite ice cream. It’s a delicious way to stay cool in the heat and a surefire hit with the kids. Try themed pizzas with forest fruits, tropical mixes or flavours inspired by the Mediterranean, the Atlantic, and beyond. Don’t hold back, go to town with your toppings as if it were a fancy ice cream sundae. Knickerbocker Glory Pizza anyone?
