Hot cocktail trends for a cool summer

In the same way fashion and food trends constantly change, the world of cocktails is shaking things up with new trending cocktails for summer 2025

Expect bold new flavours and surprising sensations. This season, mixologists are crafting even more refreshing, sophisticated, and undeniably elegant cocktails. Classic recipes are being reimagined, coffee takes centre stage, and fermented, smoked, and spiced ingredients are making their way into the mix, along with the increasingly popular lower-alcohol or alcohol-free mocktail options.
The modern classic and ever-stylish White Negroni gets an upgrade, crafted with premium gins and vermouths. Similarly, traditional mojitos, caipirinhas and piña coladas are given a luxury twist with top-shelf spirits.
Coffee is now featuring in several cocktails, adding complexity and depth of flavour. The Espresso Martini – a blend of vodka, coffee liqueur and fresh espresso – is a perfect example. Fermented and smoked ingredients such as kimchi or kombucha also make an appearance, or reductions of sweet wines or balsamic vinegar for a savoury, unique umami finish. And using fat-washing techniques, ingredients like browned butter or essential herb oils are infused to lend texture and a richer mouthfeel.
Mini martinis are a fun way to sample different vermouth-based mixes, with added botanicals or creative pairings that offer more complexity. The Spritz remains a firm favourite, balancing the subtle bitterness of Campari with the sweet touch of Aperol, topped off with dry white wine, prosecco and soda. Inspired by this classic, the Hugo Spritz has surged in popularity: made with sparkling wine, elderflower syrup, soda and fresh mint.
For a low-alcohol option, the watermelon and mint cocktail is a refreshing and light blend made with watermelon purée, a splash of vodka, lime juice and fresh mint leaves. If you prefer it alcohol-free, simply swap the vodka for 0.0% gin.
And for adventurous palates wanting a bit of a kick, look no further than the Moscow Mule – a mix of vodka, lime juice and sweet-spicy ginger beer, traditionally served in a small copper mug. Or try one of its many exciting variations: the Mexican Mule, with tequila, lime and a slice of jalapeño; the Kentucky Mule, with bourbon; the Blood Orange Mule, enhanced with blood orange juice; the Blueberry Mule, featuring blueberry vodka or fresh berries; and the Tropical Mule, with rum or cachaça, 30 ml of pineapple juice, mint leaves and/or a slice of pineapple to garnish.
