Canarian-inspired sorbets

Volcanic Malvasia wine and pear

Ingredients
250 ml Malvasia volcanic wine from Lanzarote
3 ripe pears, peeled and chopped
Juice of 1 lemon
100 g sugar
100 ml water

Method
Make a light sugar syrup dissolving the sugar in the water. Blend the pears with the wine, lemon juice, and syrup. Freeze the mixture, stirring every hour.

Mint and canarian honey rum sorbet

Ingredients
1 bunch of fresh mint leaves (hierbahuerto)
100 ml Canarian honey rum
Juice of 2 Canarian lemons
150 g sugar
250 ml water

Method
Make a light syrup with the sugar and water, then add the mint leaves to infuse for 15 minutes. Remove the mint leaves, then mix the syrup with the honey rum and lemon juice. Freeze, stirring every hour.
