A spritz is the quintessential aperitif: a dry, bitter or aromatic cocktail that blends sparkling wine with a splash of soda and a twist of citrus. While the Aperol remains a classic, a new wave of spritzes has been brewing since 2024, and in 2026, it is tipping into a global trend.
This new generation of spritzes plays with artisanal vermouths, including biancos and rosés, botanical liqueurs and Mediterranean notes of sage or rosemary. Other variants opt for a gently bitter citrus bite with blood orange or grapefruit. Healthier, low-alcohol and zero-proof options are plentiful, too.
Cities are stamping their signatures on the glass: New York stirs in cold-brew coffee; Berlin favours tart rhubarb; London infuses Earl Grey; Rome pairs bergamot with Prosecco. Simple to mix and inherently photogenic, these spritzes blend urban cool with seasonal lightness—the perfect springtime sip for sun-drenched terraces and social feeds alike.
For a Canarian twist, create a Volcanic Spritz with a toasted gofio infusion, local grapefruit, banana or prickly-pear liqueurs and island wines. Add sparkling Malvasia, top with sparkling water from Firgas or Teror, and garnish with a lime and tangerine twist and a sprig of fresh mint for a beautifully aromatic, slightly sweet-and-sharp aperitif.
