Ingredients (serves 2)
- 2 dragon fruits (use the skins as a serving bowls)
- 1 green kiwi fruit
- ½ large mango (or 1 small mango)
- A cup of pineapple or apple, diced
- A handful of red grapes
- 1 star fruit (optional, for garnish)
- Juice of ½ lemon or lime (optional)
- 1–2 teaspoons sugar cane syrup or maple syrup (optional, to taste)
- Fresh mint leaves (to garnish)
Method
Slice the dragon fruit lengthways and carefully scoop out the flesh with a spoon, taking care not to break the skins so they can be used as serving bowls. Cut the flesh into bitesize cubes and set aside.
Prepare the remaining fruit into a variety of shapes. For example, slice the kiwi into half-moons; dice the mango and pineapple (or apple); leave the grapes whole or cut them in half, as you prefer.
Place all the prepared fruit in a bowl. If using, lightly dress with a squeeze of lemon or lime juice and a drizzle of syrup. Mix gently, taking care not to bruise the fruit.
Spoon the fruit mixture into the hollowed-out dragon fruit shells. Decorate with star fruit slices and mint leaves before serving.
