It became part of everyday life in the Canary Islands after arriving through the early Atlantic trade routes, adapting perfectly to the subtropical climate. Alongside the fruit came the tradition of making the dense paste known across Latin America as pasta de guayaba. In the Canaries, traditional methods of reducing and occasionally drying fruit evolved with the addition of sugar as a preservative, creating a sweeter and longer-lasting version.<\/p>\n<p lang=\"en-GB\">In both concept and use, it is very similar to quince paste (membrillo). In the Canary Islands, though, it reflects less a need for preservation than simply another way of enjoying the fruit. Even so, it remains a product with deeply domestic roots, still more associated with home kitchens than industrial production.<\/p>\n<p lang=\"en-GB\">Its most classic, and arguably best, pairing is with fresh Canarian cheese. The contrast is what makes it work: concentrated sweetness against cool dairy freshness, firm texture against creaminess, tropical aromas against the neutrality of the cheese. It also pairs beautifully with mild semi-cured cheeses or richer varieties such as brie, camembert, blue cheese or gorgonzola.<\/p>\n<p lang=\"en-GB\">Its role in baking is versatile and unpretentious. It can be used as a filling for pastries, empanadillas and tarts, layered into cakes, served with puff pastry or incorporated into more contemporary desserts.<\/p>\n<blockquote>\n<p style=\"text-align: center;\"><em><strong><span style=\"color: #fd0202;\"><span lang=\"en-GB\">Guava Paste<\/span><\/span><\/strong><\/em><\/p>\n<\/blockquote>\n<p lang=\"en-GB\"><b>Ingredients (makes approx. 500 g)<\/b><\/p>\n<hr \/>\n<p lang=\"en-GB\">\u2022 1 kg ripe guavas<\/p>\n<p lang=\"en-GB\">\u2022 400 to 500 g sugar<\/p>\n<p lang=\"en-GB\"><b>Method<\/b><\/p>\n<hr \/>\n<p lang=\"en-GB\">Wash the guavas and cut them into pieces without peeling them. Simmer over a medium heat in a pan with a splash of water until soft and beginning to break down. Blend the mixture and pass through a fine sieve or food mill to remove all seeds. Weigh the smooth pulp and return it to the pan. Add the sugar, roughly half the weight of the pulp and mix well.<\/p>\n<p><span lang=\"en-GB\">Return to a medium-low heat, stirring frequently as it can spit and catch on the bottom of the pan. Although it will seem quite liquid at first, it will gradually thicken. From that point on, the right consistency is more visual than exact: trust the texture. It is ready when stirring becomes noticeably heavier, and the paste pulls away from the base of the pan, and a spoon leaves a clear groove. <\/span><\/p>\n<p lang=\"en-GB\">Pour into a dish lined with baking paper and leave to cool at room temperature. Within a few hours, it will become firm.
