{"id":40624,"date":"2025-09-30T00:01:47","date_gmt":"2025-09-29T23:01:47","guid":{"rendered":"https:\/\/www.viva-lanzarote.com\/?p=40624"},"modified":"2025-09-03T18:18:07","modified_gmt":"2025-09-03T17:18:07","slug":"langosta-a-la-plancha-con-mantequilla-de-coral-y-reduccion-de-brandy","status":"publish","type":"post","link":"https:\/\/www.viva-lanzarote.com\/en\/langosta-a-la-plancha-con-mantequilla-de-coral-y-reduccion-de-brandy\/","title":{"rendered":"Grilled Lobster with Coral Butter &#038; Brandy"},"content":{"rendered":"<p><strong><em>Ingredients (serves 4)<\/em><\/strong><\/p>\n<p><strong>Lobster <\/strong><br \/>\n2 live lobsters (600\u2013700g each)<br \/>\n2 tbsp extra virgin olive oil<br \/>\nSea salt flakes<br \/>\nFreshly ground black pepper<\/p>\n<p><strong>Coral Butter <\/strong><br \/>\nCoral lobster roe<br \/>\n100g butter, softened<br \/>\n1 garlic clove, finely minced<br \/>\n1 tsp lemon juice<br \/>\nSalt and pepper, to taste<\/p>\n<p><strong>Brandy Reduction <\/strong><br \/>\n200ml good quality brandy<br \/>\n100ml fish stock<br \/>\n1 shallot, finely chopped<br \/>\n1 tsp brown sugar<br \/>\n1 knob of butter<\/p>\n<p><strong>Mango pearls (using spherification) <\/strong><br \/>\n250g mango pulp<br \/>\n2g sodium alginate<br \/>\n500ml cold mineral water<br \/>\n3g calcium chloride<br \/>\n1 tsp sugar<\/p>\n<p><strong>Method <\/strong><br \/>\n1. Blanch the lobsters in salted water for 3\u20134 minutes. Remove from the water and halve lengthwise with a large, sharp knife. Carefully extract the coral (liver and roe) and set aside for the butter.<\/p>\n<p>2. Make the coral butter by blending the coral, butter, garlic, lemon juice, salt, and pepper until smooth. Chill until needed.<\/p>\n<p>3. Prepare the brandy reduction. Saut\u00e9 the shallot in the knob of butter until soft. Add the brandy and flamb\u00e9 carefully. Stir in fish stock and brown sugar, then reduce by simmering over a medium heat until slightly thickened. Keep warm.<\/p>\n<p>4. Create the mango pearls using the spherification method. Mix the mango pulp with sugar and sodium alginate and stir well. Let the mixture rest for 15 minutes. Dissolve the calcium chloride in cold mineral water. Using a measuring spoon or dropper, place the mango mixture into the calcium bath. Let them set for 1\u20132 minutes until gelled, then rinse gently in cold water. For an easier alternative, simply use mango cubes or balls.<\/p>\n<p>5. Heat a griddle with a little olive oil. Grill the lobster halves first flesh side down for 3\u20134 minutes, then turn and cook briefly on the shell side. One minute before finishing, brush the coral butter over the meat to melt and infuse flavour.<\/p>\n<p>6. Serve by placing a lobster half on each plate. Drizzle brandy reduction and garnish with mango pearls which add a fresh, sweet contrast.
