{"id":40619,"date":"2025-09-30T00:01:30","date_gmt":"2025-09-29T23:01:30","guid":{"rendered":"https:\/\/www.viva-lanzarote.com\/?p=40619"},"modified":"2026-02-23T16:51:46","modified_gmt":"2026-02-23T16:51:46","slug":"pastel-vegano-de-naranja-y-almendras","status":"publish","type":"post","link":"https:\/\/www.viva-lanzarote.com\/en\/pastel-vegano-de-naranja-y-almendras\/","title":{"rendered":"Vegan &#038; Gluten-free Orange &#038; Almond Cake"},"content":{"rendered":"<p><strong><em>Ingredients (serves 8)<\/em> <\/strong><\/p>\n<p>2 medium thin-skinned oranges<br \/>\n200g ground almonds<br \/>\n200g caster sugar (or substitute with panela or erythritol)<br \/>\n5 eggs<br \/>\n1 tsp gluten-free baking powder<br \/>\nA pinch of salt<br \/>\n1\u20442 tsp ground cinnamon or cardamom (optional, for extra flavour)<br \/>\nIcing sugar, to dust<br \/>\nToasted flaked almonds, to decorate<\/p>\n<p><strong><em>Method<\/em><\/strong><\/p>\n<p>1. Boil the whole, washed oranges (skin on) in a saucepan of water for 30\u201340 minutes, or until very soft. Drain and allow to cool slightly, then blitz, peel and all, into a smooth pur\u00e9e.<\/p>\n<p>2. Preheat the oven to 180 \u00b0C (fan 160 \u00b0C). Grease a 22 cm round cake tin and line the base with baking paper.<\/p>\n<p>3. In a large bowl, whisk the eggs and sugar until light and fluffy. Stir in the orange pur\u00e9e until evenly combined.<\/p>\n<p>4. Add the ground almonds, baking powder, salt, and optional spice. Fold everything together gently with a spatula until just mixed.<\/p>\n<p>5. Pour the batter into the prepared tin and bake for 45\u201350 minutes, or until a skewer inserted into the centre comes out clean. If the top begins to brown too quickly, cover loosely with foil partway through baking.<\/p>\n<p>6. Allow to cool slightly before turning out onto a serving plate.
