{"id":32567,"date":"2024-07-01T00:01:19","date_gmt":"2024-06-30T23:01:19","guid":{"rendered":"https:\/\/www.viva-lanzarote.com\/?p=32567"},"modified":"2024-07-01T00:01:19","modified_gmt":"2024-06-30T23:01:19","slug":"chilled-beetroot-soup","status":"publish","type":"post","link":"https:\/\/www.viva-lanzarote.com\/en\/chilled-beetroot-soup\/","title":{"rendered":"Chilled beetroot soup"},"content":{"rendered":"<h3><em>Ingredients<\/em><\/h3>\n<ul>\n<li>2 cooked beetroots<\/li>\n<li>1 plain yoghurt (unsweetened)<\/li>\n<li>1 medium cucumber<\/li>\n<li>1 spring onion<\/li>\n<li>2 sprigs of fresh dill, chopped (or 2 teaspoons dried dill)<\/li>\n<li>Juice of half a lemon<\/li>\n<li>1 teaspoon salt<\/li>\n<li>1\/2 teaspoon sugar (optional)<\/li>\n<li>250-300 ml water (adjust for desired thickness)<\/li>\n<\/ul>\n<hr \/>\n<h3><em>Method<\/em><\/h3>\n<p>The beets need to be cooked and peeled beforehand. Shop-bought pre-cooked beetroot works well in this recipe. Toss all the chopped ingredients into your blender or food processor until you get a nice silky consistency. Add the yoghurt, lemon juice and dill. Season with sea salt and a little black pepper. Taste and check the flavour; if your tastebuds say so, add a pinch of sugar. Blend again until smooth. Adjust the consistency with water until it reaches your preference. You could also use a sieve or manual food mill if you prefer a super-smooth texture. Thicker for dipping, thinner for sipping &#8211; you choose!<\/p>\n<p>This refreshing soup is best served chilled, so refrigerate for at least 2 hours before serving or, better still, overnight.
