{"id":1459,"date":"2022-04-01T20:45:18","date_gmt":"2022-04-01T19:45:18","guid":{"rendered":"https:\/\/www.viva-lanzarote.com\/roast-lamb-with-sweet-chilli-glaze\/"},"modified":"2022-05-09T19:47:57","modified_gmt":"2022-05-09T18:47:57","slug":"roast-lamb-with-sweet-chilli-glaze","status":"publish","type":"post","link":"https:\/\/www.viva-lanzarote.com\/en\/roast-lamb-with-sweet-chilli-glaze\/","title":{"rendered":"Roast lamb with sweet chilli glaze"},"content":{"rendered":"<h3><em><strong>Ingredients\u00a0<\/strong><\/em><\/h3>\n<hr \/>\n<ul>\n<li>2 legs of lamb<\/li>\n<li>2 red onions<\/li>\n<li>Olive oil (EVOO)<\/li>\n<li>Salt<\/li>\n<li>Black pepper<\/li>\n<li>Rosemary (garnish)<\/li>\n<\/ul>\n<p><strong>For the sauce<\/strong><\/p>\n<ul>\n<li>1 dried chilli<\/li>\n<li>100g white sugar<\/li>\n<li>4 tbsp rice vinegar<\/li>\n<li>3 cloves garlic<\/li>\n<li>1 tblsp soy sauce<\/li>\n<li>Juice of half a lemon<\/li>\n<li>Salt<\/li>\n<li>Black pepper<\/li>\n<\/ul>\n<h3><em><strong>Method<\/strong><\/em><\/h3>\n<hr \/>\n<p>Preheat the oven to 180\u00ba C. Season the lamb with salt and freshly ground pepper. Place on a baking tray, drizzle with EVOO oil and roast in the oven for 40 minutes. Meanwhile, prepare the sauce.<\/p>\n<p>Remove the chilli stalk and seeds and saut\u00e9 in a pan with four tablespoons of hot water, the sugar, vinegar, crushed garlic, soy sauce, lemon and a pinch of salt. Bring to the boil, reduce the heat to the minimum and simmer for fifteen minutes.<\/p>\n<p>Remove the lamb from the oven and transfer to a serving dish. Cut the onions into eighths and place them in the dish. Place the lamb (turned over) on top and roast for a further 40 minutes. Glaze the lamb with plenty of sauce and roast for a further ten minutes. Leave to rest for fifteen minutes.<\/p>\n<p>Place the roast lamb on a platter with the onions and garnish with a few sprigs of rosemary.
